I was browsing through the herb spiral at the garden, smelling all of the wonderful smells. I hadn’t paid any attention to bee-balm before this year and it’s my go-to for teas now, and as I was smelling it a thought came across my mind… “Hey! People make mint jelly, I’ll make bee balm jelly!” With the idea bouncing around in my head, I found a recipe and made some. Let me tell you, it wasn’t an easy process, but the outcome was a honey-golden jelly that tasted unlike anything I had ever had before.
I made two batches which yielded 10x125mL jars which will be sold at the market.
The recipe is as follows…
Bee Balm Jelly
2c bergamot leaves (bee balm leaves)
2 1/2 c water
Bring to a boil and set aside for 15 minutes (covered)
Strain and use 2 cups
1 1/2c apple juice
1 1/2c apple cider vinegar
1 pectin crystals
Stir until it comes to a rapid boil. When it does, add 4c of sugar, boil hard until it gels (this took a really long time for me, so be patient!)
